Creative CoVid Quarantine Cocktails, Day 54: Taking It All With A Grain of Salt

Grain of salt? Lately, we need a huge ol’ chunk of salt. Which mathematical model do we believe?  Whose story do we believe? Do we even bother watching the various press conferences?

Oh, and by the way, Happy Cinco de Mayo! Of course, I selected a margarita—with tons of salt on the rim–for today’s drink.

This is my version of a cucumber-cilantro margarita. In a shaker, muddle 4 slices of peeled cucumber, 2 tablespoons of fresh cilantro leaves, 1 lime wedge, and 2 tablespoons of sugar. Add 2 ounces silver tequila, 2 ounces triple sec, and 1 ounce fresh lime juice.  Add ice and shake well. Rub the rim of a margarita glass with a lime wedge (or dip into lime juice) and then dip rim into margarita salt or kosher salt. Strain the drink into the glass and garnish with a cucumber slice or a lime wedge.
